Instant Pot Lentil Soup

  • 1 1/2 cups green lentils
  • 1/2 cups diced onions
  • 1 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 16 oz crushed tomatoes
  • 4 cups broth
  • Salt & Pepper to taste
  • 1 tsp thyme
  • chopped veggies (optional, I suggest potatoes, carrots, celery, and/or peas)
  1. Sauté onions in oil until translucent
  2. Add garlic and stir until fragrant, about 30 seconds
  3. Add lentils and stir to coat for about a minute
  4. Add crushed tomatoes, chopped veggies, and broth
  5. Turn off heat, add seasonings, and mix well
  6. Cook at high pressure for 15 minutes
  7. Let sit on low for 15 minutes before releasing pressure

Notes: Serve with yogurt and grated parmesan cheese
