- 1 1/2 cups green lentils
- 1/2 cups diced onions
- 1 Tbsp minced garlic
- 1 Tbsp olive oil
- 16 oz crushed tomatoes
- 4 cups broth
- Salt & Pepper to taste
- 1 tsp thyme
- chopped veggies (optional, I suggest potatoes, carrots, celery, and/or peas)
- Sauté onions in oil until translucent
- Add garlic and stir until fragrant, about 30 seconds
- Add lentils and stir to coat for about a minute
- Add crushed tomatoes, chopped veggies, and broth
- Turn off heat, add seasonings, and mix well
- Cook at high pressure for 15 minutes
- Let sit on low for 15 minutes before releasing pressure
Notes: Serve with yogurt and grated parmesan cheese
